Chubby Hubby Truffles
Who could pass up the combination of chocolate, pb, and pretzels?
Makes 16-18
Prep Time: 30 minutes
Chill Time: 1 hour total
Ingredients:
1 1/2 cups of pretzel peices
1/2 cup of creamy PB
1 tbls of unsalted butter (room temp)
2 tablespoons of light brown sugar
pinch of salt
3 tbls of powered sugar
1 1/2 cup of milk or semisweet chocolate chips
1 tablespoon of vegetable shortening
1. Put the pretzels into a resealable plastic bag and crush them into small pieces. You can use a rolling pin or your hands.
2. In a bowl, combine the PB, butter, brown sugar and salt. Stir until all of the ingredients are blended.
3. Add the pretzel pieces to the mixture and mix thoroughly. Add the powdered sugar and mix until completely combined.
4. Line a baking sheet with wax paper. Using your hands or a spoon, create small relatively round balls of the mixture and place them on the cookie sheet. Put in the refrigerator and chill for at least 30 minutes.
5. When your truffles have become hardened in the refrigerator, microwave the chocolate chips and vegetable oil together in a small bowl at 50% power in 30 - second increments. Be sure to stir after each increment until completely melted and smooth.
6. Working one at a time, dip the truffle into the melted chocolate and use a spoon or fork to roll it around - ensuring that it is coated. Next, take the truffle out of the chocolate and place it onto a pretzel. Repeat with all of the truffles.
7. Put the baking sheet back into the refrigerator for another 30 minutes.
8. Once cooled, garnish with drizzled melted PB and crushed pretzel. Store in an airtight container in the refrigerator.
